Salmon with Vegetable Rice


This salmon with vegetable rice is a perfect to go lunch that I have been enjoying. This will keep you full and is super delicious; I am a huge fan of using air fryers because everything cooks so much faster. I used the air fryer to cook the salmon and it was done in 10 minutes!

Salmon with Vegetable Rice

Vegetable Rice



  1. Brush the salmon with extra virgin olive oil.

  2. In a small bowl add the garlic powder, salt, pepper, paprika, cayenne pepper, and coconut sugar; stir everything until seasoning is well combined.

  3. Rub seasoning into salmon using your hands.

  4. Brush maple syrup onto salmon filet.

  5. Place in the air fryer and cook at 400 degrees for 10 minutes.


  1. If using Jasmine rice it's best to wash and soak for 10 to 20 mins before cooking. Drain and set aside.

  2. Heat the oil in a skillet over medium heat. Add the onion and cook 3 minutes, until translucent.

  3. Add all the vegetables and sauté for an additional one or two minutes.

  4. Add the rice and cook on medium heat for two minutes.

  5. Add the stock and water, coconut aminos, salt and pepper.

  6. Let come to a boil - then lower the heat to a minimum low. Cover the pan and let cook on low for 20 minutes or until the rice is fluffy.

Fun Fact!

Paprika derives from air-dried, ground Capsicum aka red bell peppers. This spice is traditionally made from red bell pepper, yet any pepper can be made into paprika.

Smoked Paprika is created by slowly smoking red peppers over a wood fire for two weeks.

  1. Extremely easy and delicious recipe!! The different spices used for the fish give the most interesting flavor to the fish. Definitely my go to for my fish dishes.
