This comforting tomato soup is super easy to make and perfect for end of the cold weather season. I am definitely taking advantage of this weather to enjoy our warm soups. This is a very classic soup that pairs great with grilled cheese. I promise you will not be disappointed and your family will love it!
Preheat your oven to 400 degrees.
In an baking dish, toss in your tomatoes, onion, garlic, extra virgin olive oil and salt and pepper.
Roast for 30-40 minutes until everything is soft and the tomatoes are beginning to burst and char a little.
Then pour the roasted mixture and all its liquids into a high speed blender or food processor and blend.
Add the vegetable broth and continue to blend until smooth.
Top with heavy cream and fresh chopped basil.
Serves best with a warm creamy grilled cheese!
