Friday: 

Oats and chia seeds arepa with quesito blackberries and scrambled eggs.

  • We had to tried the famous Big Mac tacos 🌮; it definitely hits your McDonald’s crave on this fan favorite menu item. 

Big Mac Sauce 

    •            1 cup light mayonnaise
    •            4 tablespoons pickle relish
    •            2 tablespoons dijon mustard
    •            1 teaspoon granulated sugar
    •            1/2 tablespoon white vinegar
    •            1 1/2 teaspoon paprika
    •            1 teaspoon onion powder
    •            1 teaspoon garlic powder
    •            1/4 teaspoon ground pepper

Tacos 
    •            12 mini corn tortillas
    •            1 pound lean ground beef
    •            salt and pepper to taste
    •            1 tablespoon olive oil; divided 
    •            12 slices American Cheese
    •            1 white onion; diced
    •            dill pickle slices 
    •            shredded iceberg lettuce

BIG MAC SAUCE
In a small bowl, mix together all the ingredients and set aside.

TACOS
Grab a tortilla and add about 1/4 cup of ground beef and flatten out to completely cover the surface to the edges and season with salt and pepper on top.

Over medium-high heat in a skillet or pan
add a little avocado oil.

Place tacos meat face down, as many your pan can fit without over crowding.

Cool each taco for 3-4 minutes for the patty to get a nice brown crust.

Flip over, lower the heat, and add a slice of American cheese on top of the patties.

Cover with a lid and let it cook for about 2 to 3 more minutes for the cheese to melt and the tortilla to get golden and crispy. 

Then take off the heat and set aside.

ASSEMBLE THE  TACOS
Take each taco, add lettuce, onion, pickles, and big mac sauce on top and enjoy!

  • This is truly my favorite salad dressing! 

Ingredients: 

1/4 cup olive oil
1 lemon juice
1tbsp apple cider vinegar
1/2 cup dijon mustard 
1/4 cup honey 
salt and pepper  to taste

In a medium bowl whisk together all the ingredients until well combined.  
Add the mixture to a jar and enjoy!

Store in the refrigerator for up to 3 weeks.

  • As someone who is always on the go and trying to eat healthy and balance meal. Meal prepping is always my go to on Sundays. Here is a peak into this week’s meal prep! 

✅ Plain White Rice:

4 Cups of Water
2 Cups of Rice
1TBSP coconut oil

✅Salmon:

Olive oil
Garlic, salt, pepper, smoked paprika, coconut sugar
Brush with maple syrup

✅Potatoes:

Potato of your choice cut into pieces
Olive oil
Salt, pepper, smoked paprika, onion powder, garlic powder, oregano

✅Asparagus:

Olive oil
Salt, pepper, garlic powder
Saute for about 2 to 3 minutes

✅Blueberry sauce:

2 Cups of frozen blueberries
1-2 TBSP maple syrup
In a saute pan add the blueberries and maple syrup. Cook until you get a creamy consistency

✅Overnight oats:

Oats
Greek yogurt
Blueberry sauce
Mashed banana
Water
