These crispy avocado egg rolls are super easy to make with little ingredients and are perfect as appetizers for your next party. These are loaded with fresh avocados, onions, cilantro, sun-dried tomatoes and the flavor profile will leave your guest wanting more and asking for the recipe. Avocado Egg Rolls

  1. Grab a large skillet and heat the olive oil on medium-high heat.
  2. In a medium bowl, add the chopped avocados, onions, sun-dried tomatoes, cilantro, and salt; mix until well combined.

  3. Now to make the egg rolls; take the egg roll wrap and place it diagonally/diamond shade on a plate or cutting board and place the avocado mixture in the center of each wrapper. 

  4. Then using your finger, rub the edges of the egg roll wrap with water. 

  5. Take the bottom point of the egg roll wrap and roll it over the filling. 

  6. Next fold in the sides over the filling and roll up the wrap to the top point and press to seal. 

  7. Gently place each egg roll into the hot oil and fry until they are golden brown on all sides for about 2-3 minutes. 

    Work in batches; 2-3 egg rolls fry at a time.

  8. Remove with tongs and place onto a paper towel lined plate. 

  9. Serve with favorite dipping sauce.
