Baked Feta Pasta

For those pasta and feta lovers out there, this recipe will rock your taste buds. This recipe is easy and can serve up to 6 people comfortably. Add a side salad and warm baked bread to dip into the feta sauce. When making this pasta, use good quality feta cheese, as it is the main ingredient. So make it the best! Avoid feta made from cow’s milk and opt for sheep’s milk, as cow’s milk tends to be more sour in flavor! Enjoy!

  1. Preheat the oven to 400 degrees F.

  2. Coat a 9-by-13-inch baking pan with oil spray.

  3. Add the cherry tomatoes into the baking pan and coat with the extra virgin olive oil and ground black pepper until well combined. 

  4. Then place the block feta in the center of the tomatoes and season with a pinch of ground black pepper. 

  5. Place the baking pan into the oven and bake until the tomatoes have burst and the feta has softened; about 30 minutes. 

  6. Then raise the oven heat to 450 degrees F and continue to cook until the tomatoes and feta are golden brown; about 10 to 15 minutes more. 

  7. During this time, start to boil a large pot water with salt. Add the pasta and cook until al dente; about 10-12 minutes. 

  8. Save 1/2 cup of the cooking water for later and then drain the remining water from the pasta. 

  9. Next take the baking pan out of the oven and mix in the garlic and red pepper flakes. 

  10. Using a potato smasher or the back of a fork, smash the tomatoes and feta into a smooth and creamy sauce. 

  11. Add the pasta and the basil and mix until evenly coated. 

  12. If the sauce is too thick, stir in some of the pasta water that you saved but only mix a tablespoon at a time until the sauce thickens to your liking.  

  13. Lastly try the pasta and add salt/pepper to your taste.
