Cauliflower Alfredo Pasta

Pasta has always been one of my favorite dishes. I can have it everyday and never be tired of it! Try this new twist of Alfredo sauce, on your next pasta night. The sauce is just as creamy and rich as the regular Alfredo sauce minus the high sodium and dairy that is added to it. I love a good Alfredo sauce, we just wanted to make something that would have the same creaminess and consistency but less calories and nutritional. This is perfect for everyone’s taste buds and no one will even noticed is made out of cauliflower. Checkout the recipe and share your thoughts!

Cauliflower Alfredo Pasta

Instructions

  1. Pre-heat the oven to 400°F.

  2. In a smal bowl, soak the cashews in 1 3/4 cup of bowling water and set aside. 

  3. On a parchment lined baking pan add the cauliflower florets and drizzle 1 1/2 tablespoon in olive oil and place in the pre-heated oven.

  4. Bake for 20 minutes until golden brown sides and set aside. 

  5. In a frying/sauté pan, add the rest of the 1 tablespoon olive oil and heat on medium-high. 

  6. Place the chopped onions and minced garlic and cook until soften; 5 minutes.

  7. In a blender, add the roasted cauliflower, cooked onions and garlic, small bowl of cashews with water, nutrition yeast, paprika, and sea salt. 

  8. Blend until smooth and creamy texture; 3 minutes.

  9. To serve, pour the cauliflower Alfredo sauce over your favorite pasta and top with fresh chopped parsley.
