Cheesy Buffalo Cauliflower and Chickpea Casserole

Cheesy Buffalo Cauliflower and Chickpea Casserole

  1. Preheat the oven to 400 °F

  2. Whisk together the vegetable broth, buffalo sauce, nutritional yeast, and onion powder in a bowl.

  3. Add that mixture to medium saucepan on high heat and bring to a boil.

  4. In the meantime, pour the chickpeas a oven safe baking pan or casserole dish. Add the cauliflower and celery and spread evenly over the chickpeas. 

  5. Then add the uncooked rice over the top of everything.

  6. Once your stove top mixture is boiling. Remove from the heat and stir in the minced garlic. 

  7. Pour the mixture evenly over the casserole and then sprinkle the cheddar cheese on top.

  8. Cover the casserole with aluminum foil and bake in the oven for 60 minutes.

  9. After 60 minutes, remove from the oven and you can top with green onions/scallions and ranch dressing.
