Chicken and Rice Soup

Grab a medium size pot and heat olive oil over medium heat.

Add the chicken breast season with salt and pepper and sear it on each side for 3-4 minutes each side.

Add the sliced onions, carrots and celery. Let them sauté for a few minutes.

Add the minced garlic and sauté for a minute.

Add the rice, chicken stock, water and bring to a boil. Once boiling, reduce heat to medium heat and semi cover the pot. Let it cook for 30-40 minutes.

After 30-40 minutes, shred the chicken and garnish with fresh chopped parsley and fresh squeezed lemon juice.
