Chicken and Rice Soup


With the winter chills coming through your home, grab this recipe and warm up your family with this nutrition. This is my go to recipe for those cold winter days. It will warm your belly and pairs with a great piece of fresh bread.

  1. Grab a medium size pot and heat olive oil over medium heat.

  2. Add the chicken breast season with salt and pepper and sear it on each side for 3-4 minutes each side. 

  3. Add the sliced onions, carrots and celery. Let them sauté for a few minutes.

  4. Add the minced garlic and sauté for a minute.

  5. Add the rice, chicken stock, water and bring to a boil. Once boiling, reduce heat to medium heat and semi cover the pot. Let it cook for 30-40 minutes.

  6. After 30-40 minutes, shred the chicken and garnish with fresh chopped parsley and fresh squeezed lemon juice.
