Chickpea and Spinach Soup


Fall season brings the comfort of soups that are perfect all the way to winter. If you love chickpeas just as much as I do then you should give this recipe a try. This soup is super easy to make and perfect for those during the weekday lunches on the go or dinners. This soup is pack with flavor and plenty of nutrients, vitamins and protein.

  1. Grab a medium size pot and heat olive oil over medium heat.

  2. Add thinly sliced leeks and cook for 5 -7 minutes until tender.

  3. Add the chickpeas and garlic and stir occasionally for 2 more minutes.

  4. Add the vegetable broth and water; bring to a boil.

  5. Reduce to low heat and add the lemon juice, fresh thyme and ground pepper; simmer for 5 minutes.

  6. Gradually add handfuls at a time of the the spinach and stir until wilted; about 1 minute.
