This soup is super easy to make and perfect for those during the weekday lunches on the go or dinners. This soup is pack with flavor and plenty of nutrients, vitamins and protein.

Chickpea and Spinach Soup

Grab a medium size pot and heat olive oil over medium heat.

Add thinly sliced leeks and cook for 5 -7 minutes until tender.

Add the chickpeas and garlic and stir occasionally for 2 more minutes.

Add the vegetable broth and water; bring to a boil.

Reduce to low heat and add the lemon juice, fresh thyme and ground pepper; simmer for 5 minutes.

Gradually add handfuls at a time of the the spinach and stir until wilted; about 1 minute.
