Chickpea Cookie Dough Bites

If you are reading this, stop and make these bites! Your sweet tooth craving and these addictive bites will satisfy that urge. It is packed with protein, fiber and nutrients. These bites also serve as a great protein snack, I honestly have been craving this so much and it has been our weekly go to dessert; you won’t even noticed this is made with chickpeas.

Ingredients

Instructions

  1. Take your drained & washed chickpeas, peanut butter, maple syrup, oat flour, coconut sugar and vanilla extract into the food processor.

  2. Pulsate the processor on high until the dough starts to form and there are no visible chucks of ingredients. 

  3. Add the chocolate chips and pulse the processor for 2 - 3 times just to mix into the dough. 

  4. Place the dough into the refrigerator for about 15 minutes to firm up. 

  5. Grab a baking pan and line with parchment paper. 

  6. With a cookie scoop or tablespoon, scoop out the dough into golf size balls. Roll with hands to smooth out. 

  7. Then place that tray into the freezer to firm up more for about 5 more minutes.

  8. During this time, melt your chocolate bar until nice and smooth.

  9. Take the chickpea balls out of the freezer and with two forks dip and roll through the melted chocolate until fully coated. Place back onto the baking tray. 

  10. Optional: Sprinkle sea salt on top. 

  11. Once all the chickpea balls are coated, place the baking tray back into the refrigerator for 5 more minutes to allow the chocolate to harden.
