Blondies have become one of my favorite treat lately, they are absolutely delicious and I love enjoying them with a cup of black coffee or tea. I like to share these with my family; my mom now expects me to make some for her from time to time since she doesn’t like to bake. I use almond flour to make these blondies, which gives a really soft and rich texture. Blondies to me are very similar to brownies minus the chocolate fudge flavor.
Chocolate Chip Blondies
Preheat the oven to 350 F. Have a baking pan ready with parchment paper and lightly add coconut spray.
In a medium bowl add the melted coconut, coconut sugar, egg, vanilla, peanut butter and whisk until well combined. Add the baking power, baking soda, flour and mix it all together. Add the chocolate chips and mix again.
Pour the batter into the pan and spread evenly. Bake for approximately 30 minutes or until a stick comes out clean.
Cut into squares and enjoy!
