There are a hundred ways to make coconut curry chicken. This recipe is less traditional BUT never missed the flavor! If you are looking for a simple, delicious and easy lunch bowl or dinner entree for the family; this is one of my favorites. This meal does take time so plan ahead as there will be a wait time. I do all my crockpots on Sunday when I have the most time and one of the things I enjoy about these kinds of meals is that all you have to do is throw it in a crock-pot and it will cook in a matter of hours. It makes plenty for the week and is an easy grab and go for work or for a family of more!

Instructions

Crockpot Chicken
Add all the ingredients in a crock-pot and cook for approximately 4 hrs. on high or 6 hours on low.

Rice
Bring to boil the water, add rice, oil, seeds, star anise, salt and pepper. Cover and cook for about 35 minutes or until the water is completely absorbed and the rice is fluffy.
