Ingredients
    Crock Pot Chicken
  • 2 pounds Chicken Thighs
  • 1.5 cups Carrots (Chopped)
  • 1.5 cups Bell Peppers (Diced)
  • 1 Small Onion (Diced)
  • 4 Garlic Cloves (Miced)
  • 2 tablespoons Curry Powder
  • 2 tablespoons Garam Masala
  • 1 can Tomato Paste (6 oz.)
  • 1 cup Coconut Milk Light (13 oz.)
  • 1 cup Chicken Broth
  • 1/2 cup Water
  • Rice
  • 1.25 cups Jasmine Rice
  • 3 cups Water
  • 1 tablespoon Olive Oil
  • 3 Star Anise
  • 3 Cardamom seeds
  • Salt and Pepper (To Taste)
  • Optional Toppings
  • 1 lime
  • 1 bunch of cilantro
Instructions
  1. Crockpot Chicken

    Add all the ingredients in a crock-pot and cook for approximately 4 hrs. on high or 6 hours on low.

  2. Rice

    Bring to boil the water, add rice, oil, seeds, star anise, salt and pepper. Cover and cook for about 35 minutes or until the water is completely absorbed and the rice is fluffy.
