Egg Bites

If you are looking to incorporate more vegetables in your diet, try these egg bites. Not only is it a great breakfast option but you can also make a batch for the week meal prep. It is a great for a quick to go breakfast or even lunch. We used peppers, onions, and cheese of your choice but you can also change up the vegetables and add your favorite ones. You can use regular eggs or egg whites to make these.

  1. Preheat the oven for 375 degrees F. 

  2. Grab a Muffin tray and spray each spot with oil/baking spray.

  3. Add one egg to each spot and scramble with a fork.

  4. Place in each spot equal amount of chopped onions, pepper and cheese of your choice.

  5. Sprinkle some salt and pepper to taste on top.

  6. Put the muffin tray into the oven for 12-17 minutes.

  7. Spoon each one out of the muffin tray and serve with chopped green onions.

Fun Fact!

Chia Seeds can be used as an egg substitute; CHIA EGG!

  • 1 Tbsp Chia Seeds
  • 2 1/2 Tbsp Water
