Baja Fish Tacos

  1. Set Oven to 375 degrees.

  2. Line large baking sheet with parchment paper.

  3. In a small dish, combine seasonings: 1/2 tsp cumin, 1/2 tsp cayenne pepper, 1 tsp salt and 1/4 tsp black pepper and evenly sprinkle seasoning mix over both sides of fish.

  4. Lightly drizzle fish with avocado oil and dot each piece with butter.

  5. Bake at 375 for 20 min. Then with two forks gently flake the fish into bite size pieces.

Baja Sauce

  1. Combine all Baja Sauce ingredients in a medium bowl and whisk until well blended.

To serve

  1. To assemble the tacos, toast the corn tortillas on a large dry skillet or griddle over medium/high heat.

  2. Then spread Baja sauce on the tortillas, sprinkle some chopped lettuce, place bite size fish on top of the lettuce, add chopped onions, cilantro and for the cheese lovers, your favorite cheese.
