Breakfast is one of my favorite meals; I definitely consider this an essential start to my day. There are often times where I have to rush my mornings and I’m sure that for many this may happen daily. If you are like me and enjoy breakfast in the morning but don’t have enough time to sit down and have breakfast; these granola bars are so perfect as an on the go meal or snack. Its makes enough for the week and they taste delicious. Next time you want to meal prep and don’t know what to do for breakfast, give these a try and let me know your thoughts.

Granola Bars

Preheat the oven to 350 degrees F.

In a large mixing bowl, combine the cashews, oats and salt.

Then add the apricots, mango, cranberries, blueberries, and chocolate chips and mix until well combined.

With a food processor or blender, add the dates, agave syrup and vanilla extract and puree until smooth.
If the mixture is too thick or chunky; add one tablespoon of water at a time until it's texture is similar to that of apple sauce.

Pour the date puree over the oats and fruit mixture and mix thoroughly until all is coated and sticky.

Add the mixture into parchment-lined 8-9 inch baking square pan and press very firmly with the back of a spatula or with your hands.

Place the baking pan in the middle rack of the oven and bake 15-20 minutes; until the edges just start to brown.

Remove and cool completely on a cooling rack.

Then set the cooling tray into the refrigerator to fully set; approximately 2 hours before cutting into individual bars.
