Green Goddess Pasta

This plant based pasta is full of so much flavor and is perfect for those meatless days. Not only a healthy recipe but also super easy to make and in little time. This recipe is one of my go to meal prep for lunches and make a perfect grab and go meals.

The combination of the different ingredients make this sauce so rich and a great addition not only to pastas but cool it down and add it to any salad! There are so many ways to make this sauce, so you can adjust the sauce using your favorites greens; kale, zucchini, cucumbers, avocado, parsley, spinach, broccoli and more!

Instructions

  1. Bring 2 liters of salted water to a boil.
  2. Once boiling, add the Banza Pasta or a pasta of your choice. Boil for 8 minutes or until al dente. 

  3. Meanwhile, sauté the chopped onions and broccoli florets until soft; 5-7 minutes. 

  4. Then add all the ingredients together into a blender and blend until smooth. 

  5. Drain the water from the pasta and mix the blended Green Goddess sauce with the cooked pasta and cook on low heat for 2-3 minutes. 

  6. Plate and top with fresh basil and/or parmesan cheese.
