Grilled Flank Steak Tacos

Bring this Tex-Mex recipe to your next taco night! This spicy, citrusy, and most tender tacos will have your mouth water. This recipe not only creates delicious tacos but also homemade salsa verde which makes plenty for your next snack with tortilla chips or Mexican recipe.

Flank Steak

  1. With a sharp knife, finely slice the flank steak and rub the spice mix and leave in the refrigerator uncovered for minimum of 30 minutes and up to 6 hours maximum.

  2. Set your grill to a medium to high. 

  3. Cook each side until the internal temperature reaches your liking of wellness scale.

    Rare 130 degrees

    Medium-Rare 135 degreses

    Medium 145 degrees

    Medium-Well 150 degrees

    Well 160 degrees

  4. Set aside on a cutting board and rest for 8 minutes. Slice the flank steak in thin slices against the grain and slice again in small pieces.

  5. Add zest and juice of one lime.

Salsa Verde

  1. Pre heat-oven to 425 F or grill on medium-high heat.

  2. Place the onions, green tomatoes and jalapeños on a parchment paper baking tray. Drizzle with olive oil and season with salt.

  3. Bake in the oven for 15-20 minutes on both sides or grill until browned/charred.

  4. Then transfer to a blender or a food processor. Add garlic, cilantro, avocado, lime juice, olive oil, salt, ice cubes and blend until smooth. Transfer to bowl or jar. 

To Serve

  1. Heat tortillas on a grill or in then oven pan until nice and warm; 2-3 minutes each side.  

  2. Then assemble tacos starting with salsa verde, then flank steak and garnish with the chopped onions, cilantro and squeeze of a lime wedge.
