Lemon Chicken Soup

  1. Grab a medium size pot and heat olive oil over medium heat.

  2. Add the onion, carrot, & celery and cook for 10 minutes until softened.

  3. Then Add the garlic and saute for a minute and add the bay leaves, chicken breasts and stock.

  4. Bring to a boil and then lower heat to a simmer for 15 minutes.

  5. Remove the chicken and shred. Remove and discard bay leaves. 

  6. Add the orzo to the pot and shredded chicken; continue to cook for 10 minutes.

  7. As the orzo is cooking, whisk the egg yolks and lemon juice in a small bowl. Slowly ladle some of the soup liquid over the egg mixture to temper it and add it to the pot.

  8. Cook for additional 5 minutes and then add the fresh dill and salt & pepper to taste.
