Ingredients
  • 10 Lasagna Noodles (Sliced in half)
  • 1 Yellow Onion (Chopped into bite size)
  • 1 Red Pepper (Chopped into bite size)
  • 2 Celery Ribs (Chopped in bite size)
  • 6 cloves Garlic (Minced)
  • 1/2 pound Ground Beef (Lean)
  • 1/2 pound Ground Italian Sausage
  • 2 tablespoons Avocado Oil
  • 1 tablespoon Dried Basil
  • 1 tablespoon Dried Oregano
  • 1 tablespoon Dried Thyme
  • 1 teaspoon Red Pepper Flakes
  • 6 ounces Tomato Paste
  • 1/2 cup Dry White Wine
  • 4 cups Chicken Broth (Low Sodium)
  • 28 ounces Crushed Tomatoes
  • 1/2 cup Water
  • 1 can Coconut Milk (Lite/Low Fat)
  • 1 cup Provolone Cheese (Shredded)
  • 1/2 cup Parmesan Cheese (Grated)
Instructions
  1. Heat the avocado oil in a large pot over medium-high heat.
  2. Place the chopped onion, celery, and red pepper, and cook until the veggies are softened; about 5-8 minutes. Then add in the minced garlic and cook for about 1 minute.
  3. Break up the both ground beef and sausage into small bite size pieces and season with salt and pepper.
  4. Then place the bite size beef and sausage to the pot with the vegetables and cook until browned; about 10 minutes.
  5. Add the tomato paste, dried basil, dried oregano, dried thyme, and chili flakes and cook 5 minutes, then pour in the dry white wine.
  6. Next pour the crushed tomatoes and low sodium chicken broth and cook 10 minutes until thickened slightly.
  7. Stir in the coconut milk, water and cook until simmer; about 5-10 minutes.
  8. Meanwhile, boil the noodles until al dente, drain and slice in half; set aside.

  9. Grab your bowls and place 4-6 half into it and ladle the soup into bowls.

  10. Lastly topped with shredded provolone and grated parmesan cheese.
