
Meatloaf with Honey Sesame Sauce

Preheat oven to 425 degrees °F

Chop the onion and bell pepper very finely into rice grain size or you can use a food processor or even a blender at a pulse rate. Then add the garlic and ginger and mix well in a bowl.

Heat 1 tablespoon peanut oil or avocado oil in a small skillet over medium heat. Add the onion mixture and cook, until softened; approximately about 5 minutes.

Then Transfer the cook onion mixture into a large bowl. Let cool for a couple minutes.

Once onion mixture is cool enough, add egg, breadcrumbs, 1 tablespoon soy sauce, salt and mix well.

Add your ground meat of your choice and mix until well combined. Shape the mixture into four 2-by-4 inch loaves; place on a parchment paper pan.

Bake the meatloaves until an instant-read thermometer inserted in the center of a loaf registers 165 degrees °F; about 15 to 20 minutes. Then remove and set aside.

Preheat broiler to high.

Brush the meatloaves with the honey sesame sauce.

Place the meatloaves on the top rack until lightly brown, only 1 to 2 minutes. Be careful not to burn the loaves! We just want to brown them.
Honey Sesame Sauce

Combine honey, sesame oil, sesame seeds and the remaining 2 tablespoon soy sauce in a small sauce pan.

Bring to a simmer and then lower the heat for 5 minutes.
TIP: If sauce is too watery. Take a small bowl and combine 1 tablespoon of cornstarch and 1 tablespoon water. Mix well and pour slowly into the sauce while stirring.
