Oat Pancakes with Blueberry Sauce


Start the weekend off right with some delicious fluffy pancakes! These pancakes will motivate you to wake up and indulge your sweet tooth. The sweet blueberries bursting sauce over your fluffy pancakes will be the perfect way to start and/or finish your weekend.

Oat Pancakes with Blueberry Sauce

Blueberry Sauce


Oat Pancakes

  1. In a large bowl, mix together the Greek yogurt, eggs and vanilla extract; whisk until mixture is smooth. 

  2. In a separate bowl, add sugar, oat flour, all-purpose flour, baking powder, baking soda, salt and cinnamon; whisk until well combined.

  3. Then combine and mix well the two bowls; wet and dry. If the batter is too thick; add 1 tablespoon of milk at a time until it reaches the desired consistency.

  4. Grease a pan, skillet or griddle by melting coconut oil on medium-high heat.

  5. Pour ¼ cup portions of pancake batter onto the heated surface. 

  6. Cook until bubbles start forming in the batter and the sides become set; about 2-4 minutes.

  7. Flip and cook the other side for about 2 minutes or until golden brown.

Blueberry Sauce

  1. In a frying pan, add the washed blueberries and agave syrup. 

  2. Cook for about 5 - 8 minutes until blueberries start popping and sauce is thickening.
