One Pan Herb Chicken with Wild Rice

Busy work week and want a delicious quick dinner? Follow this one pan recipe that only takes less then 30 minutes to cook. This is our go-to for our chicken and rice craving. Its packed with flavor, nutrition and hearty.

One Pan Herb Chicken with Wild Rice

Instructions

  1. Take your dried spices and mix together in a small bowl and season side of the each chicken breast evenly and set aside. 

  2. Grab a cast iron or large skillet and on medium/high heat and add the avocado oil.

  3. Next add the seasoned chicken breasts to the skillet and brown both sides: approximate 3-4 minutes each side. 

  4. Remove the chicken from the skillet once golden brown and set aside.

  5. In the same skillet, add the chopped shallots and saute until soften; 3-5 minutes.

  6. Add the minced garlic and let it simmer for 1 minute.

  7. Pour the wild rice and slowly pour with the chicken broth into the skillet. 

  8. Bring the skillet to a boil and then add the resting chicken breasts and its juices follow by the lemon juice. 

  9. Lower the heat on the stove to a low simmer and cover the skillet for approximate 20 minutes until all the liquid is gone. 

  10. Spoon to serve and top with fresh chopped parsley and lemon zest.
