Are you a peanut butter and camp fire lover? As the fall weather rolls in lets roll in a new recipe. I am a huge peanut butter lover. It cannot be missing from my pantry at any time. I just love the taste, the texture and need to incorporate in every meal somehow. These Muffins are so good and a perfect mixture with chocolate chips and marshmallows, The recipe is great to grab for a sweet snack and your family will love it!

Peanut Butter S’mores Mini Muffins

Pre-heat the oven to 350°F.

Grab a ziplock bag and place the gram crackers into it and mash until crumbs.

Dump the gram cracker crumbs into a bowl and add melted butter.

Mix gram cracker batter until well combined.

In a greased baking sheet, mold the outline of the muffin with the gram cracker batter.

Place into the preheated oven for 10-15 minutes; until golden brown.

Then place to the side and let it cool completely; 15 minutes.

Grab a large mixing bowl and mix the peanut butter, coconut sugar, egg, vanilla extract, salt, baking soda, chocolate chips, milk until well combined.

Take the gram cracker crust muffin tray and add a couple marshmallows in the middle and pour some batter over it.

Place the gram cracker muffin tray back into the preheated oven for additional 10 minutes.

Take the muffin tray out of the oven and place a marshmallow on top of the muffin and place back into the oven for another 6-8 minutes.

Once top marshmellow is browning and melting, take out of the oven and let it cool completely. Spoon each out onto a cooling rack and enjoy!
