Southwest Bean Lasagna

If you are looking for a meatless healthy lunch or dinner try this delicious black bean lasagna. I promise you will love it so much that you’ll want to have more and more! Be creative and add your favorite vegetables or beans into this recipe. This is also a great meal prep idea and perfect to go lunch.

  1. Preheat oven to 375°.

  2. Next drain and wash the black beans, and set aside. 

  3. Then in a medium skillet, add the avocado oil and heat over medium-low heat. 

  4. Sauté the minced garlic for about 2 minutes and add the black beans and vegetable broth. Bring this to a simmer for 5 minutes.  

  5. Add the cumin, chili powder, oregano, paprika, black pepper, salt, and chopped cilantro; stir to combine.

  6. Grab a medium size baking dish (11.75" x 8") and spray the bottom of the dish with nonstick cooking spray. 

  7. Add a two tortillas to the bottom, 1/4 black bean mixture, 1/4 salsa, and 1/4 cheese; continue layering until all ingredients have been used. Top casserole with remaining 1/4 cup cheese and slices of jalapenos.

  8. Spray some nonstick oil on some foil and cover casserole. Bake for about 20 minutes or until cheese is hot and bubbly. 

  9. Remove foil, and continue cooking 8–10 minutes.
