Spinach & Ricotta Lasagna Rollups

First defrost your frozen spinach.

Pre-heat the oven to 400°F.

Boil 8-10 lasagna noodles for 6-8 minutes; until al dente.

During this time in a large bowl combine the spinach, zest of the lemon and juice, ricotta, minced garlic, and 1/2 cup parmesan cheese.

Drain the lasagna noodles and let cool for a couple minutes.

On a large plate, lay down the lasagna noodle and spread 1/4 cup of the spinach ricotta and roll up.

Grab a skillet or oven safe baking dish and coat with oil.

Then line with a coat of 1 cup of your favorite pasta sauce.

Place the lasagna roll up on the sauce and top with the rest of the pasta sauce.

Top with mozzarella cheese and bake for 20-25 minutes until cheese is golden brown.
