Sweet Chili Ginger Tofu

Enjoy this sweet and spicy tofu on your next Asian food craving! This meal will not disappoint you as it is a perfect balance of sweet and spicy that will satisfy those taste buds. My husband and I love to incorporate tofu into our diets on those meatless days to get the excellence source of proteins, fiber, vitamins and minerals without the cholesterol and saturated fats found in meats.

Instructions

  1. First we need to take all the moisture out of the tofu. Take the tofu and drain all the liquid out the packet. Then pat dry with a paper towel.

  2. Next, on a paper-towel-lined cutting board, place the tofu and place another paper towel on top of the tofu. Then place a large flat plate on the top of the tofu; a little weight/heavy. This will help push out remaining moisture outside the tofu. This process can take up to 20 minutes. Tofu right out the packet is too wet to work this recipe.  

  3. Once the tofu is dry enough, cut into small cubes and set to the side.

  4. Mix dry herbs and spices into a medium bowl; whisk well.

  5. Add the tofu cubes and gentle mix in the dry seasonings until well combined. 

  6. Set your air fryer to 370 degrees F and place your tofu into the baking tray for 15 minutes. 

Sweet Chili Ginger Sauce

  1. Add the sliced onions, red pepper, minced garlic and ginger in a pan and sauté for 5 minutes. 

  2. Once golden brown, add the coconut aminos, sweet chili sauce and honey for another 2 minutes.

  3. Once the tofu is done, add it to the sauce and vegetable mix and give it a good coat/mix. 

To Serve

  1. Add sweet chili ginger tofu over quinoa or rice.

  2. Top with chopped green onions/scallions.
