Every time I tell people that I am having a salad for lunch or dinner they look at me and say that that is boring; but honestly my version of salad is far from being boring at all. After all, I love food and the last thing I want to eat is boring lettuce with tomato. This sweet potato and quinoa salad is full of nutrients and will for sure be a great option for lunch or even dinner. It has a mixture of sweet and salty which I honestly love this combination. Sweet Potato, Strawberry, Feta & Quinoa Salad

Sweet Potatoes

Pre-heat the oven to 400 degrees and place a piece of parchment paper in a baking tray.

In a small bowl add the potatoes, olive oil, garlic powder, smoke paprika, red pepper flakes, salt and pepper and mix everything until well combined.

Set the potatoes on the baking tray and bake for about 25 minutes.
Quinoa

In small pot, bring 1 cups of water to boil, add ½ cup of quinoa and return to boil. Cover and reduce heat to medium and simmer until water is absorbed. About 12 minutes. Remove from heat, fluff, cover and let stand for about 10 minutes.
Vinaigrette

Combine all the ingredients and whisk together.
Salad

In a large bowl, combined the red onions, sweet potatoes, quinoa, strawberries, feta cheese and boiled eggs.

Line the containers that you will use for lunch or plate if eating at home with arugula and then top with the sweet potato mix.

Drizzle over the vinaigrette.
