Every time I tell people that I am having a salad for lunch or dinner they look at me and say that that is boring; but honestly my version of salad is far from being boring at all. After all, I love food and the last thing I want to eat is boring lettuce with tomato.  This sweet potato and quinoa salad is full of nutrients and will for sure be a great option for lunch or even dinner. It has a mixture of sweet and salty which I honestly love this combination. Give it a try and let me know your thoughts.
