Who doesn’t enjoy Meatballs? These are definitely one of my favorite meal prep ideas when looking to make enough for lunches. There are so many ways of making and seasoning meatballs; we used lean ground turkey instead of beef and or pork. The homemade pesto sauce was definitely the highlight of our dinner. Its so fresh and with a zest! We make it often and continue to enjoy it more every time we make it.
Meatballs pairs well pretty much with anything; noodles, rice, or potatoes you name it. In this occasion we used zucchini noodles to change it up.

Turkey Meatballs with Pesto Sauce
Ingredients
Turkey Meatballs
Pesto Sauce
Pasta of your choice
Instructions
Turkey Meat Balls

Preheat the oven to 400 degrees.

Take the ground turkey, miced garlic, parsley, salt, black pepper, 2 eggs, bread crumbs and parmigiana cheese. Mix it evenly, with your hands or with a wooden spoon.

Take a sheet size parchment paper to line the baking pan and roll golf ball sized meatballs and place them on to the baking pan.

Place the meatballs into the oven for 15 minutes at 400 degrees.
Pesto Sauce

Add basil, cashews, spinach, green peas, parmigiana cheese, lemon zest, lemon juice, and miced garlic into a food processor.

Blend until it is evenly processed.

Slowly pour the olive oil and water into the food processor.

Process the sauce until it is smooth.

Add to a small sauce pan and simmer for 3 minutes.
Pasta of your choice

Enjoy with your pasta of you choice! I used a zucchini and with a spiralizer i made it into noodles.

Places the zucchini noodles into a fry pan with 1 tablespoon of olive oil for 3-5 minutes with clove of miced garlic.
To serve

Take the pasta of your choice and place on the plate.

Place the meatballs on top of the pasta.

With a ladle or spoon, pour the hot pesto sauce over the meatballs and pasta noodles. Enjoy!
