This is one of my favorite week night dinners; is so simple yet delicious and low carb. You could probably even make these as snack option for parties and your guest will be delighted.
Cut the zucchini in half lengthwise, coat with olive oil and cook on the grill for about 10 minutes or until the shell is tender. Let it cool for about 5 minutes and use a spoon to carefully scoop the flesh out of the zucchinis.You can also scoop the flesh out of the zucchinis prior to cooking it; it was easier for me to scoop it out after being grilled.
In a large nonstick skillet, cook ground turkey until cooked through, breaking up the meat as it cooks. Drain off any excess fat.
Add beans, salsa, and spices. Allow simmering until mixture is hot and thickens slightly.
Spoon the meat mixture evenly into the zucchini shells, then top with the shredded cheese.
Bake for 10 minutes on broil high or until the cheese is melted and golden brown.
