Why You Will Love This Recipe

This breakfast power bowl is the morning meal that actually keeps you going, and once you have it a few times you will start looking forward to waking up to make it. Fluffy scrambled eggs, sauteed kale with garlic, black beans, warm rice, creamy avocado, and a spoonful of pico de gallo all come together in under twenty minutes. It is satisfying, genuinely nutritious, and flexible enough to work with whatever you have in the fridge on any given morning.

What makes this bowl work so well as a morning meal is the combination of macronutrients that it delivers. Complex carbs from the rice and beans give you sustained energy without the crash, quality protein from the eggs and feta fuels your muscles and keeps you full, and healthy fats from the avocado support everything else your body needs to function well. Whether you eat it before a workout or at your desk, you will feel the difference.

The key to getting the scrambled eggs right is low and slow. A good nonstick skillet and a gentle heat are all you need. Fold the eggs slowly and pull them off the heat just before they look done. Carry-over heat takes care of the rest, and what you get is soft, creamy scrambled eggs that pair perfectly with the slightly earthy kale and the hearty beans underneath.

This breakfast power bowl is also one of the best uses for leftover rice you will find. Day-old rice works better here than fresh because it has less moisture, which means it heats up evenly and holds its texture in the bowl. If you cook a batch of rice earlier in the week for dinner, set some aside and breakfast becomes even faster and more effortless the next morning.

If you want a bowl that is a little different every time, this is the one. Swap the kale for spinach, add some salsa verde instead of pico, throw in a handful of cotija cheese, or top it with a drizzle of hot sauce. The core of the bowl stays the same and it works with countless variations. It is the kind of recipe you make your own over time, and it just keeps getting better.

For the perfect scrambled eggs, use a good nonstick skillet and keep the heat low and patient.

Ingredients

Instructions

  1. Place the eggs in a medium bowl and whisk until the whites and yolks are fully combined.

  2. Add the cheese, milk, and a couple pinches each of salt and pepper. Set aside.

  3. Heat 1 teaspoon of the oil in a nonstick skillet over medium heat. Add the rice (if using day-old rice, add a splash of water as well).

  4. Cook just until heated through, about 1 minute. Divide between two bowls. Cover the bowls with pot lids or a clean kitchen towel to keep warm.

  5. Return the skillet to the heat and add another 1 teaspoon of the oil. Add the kale, garlic, black beans and a pinch of salt. Cook, stirring occasionally, just until wilted, 1 to 2 minutes. Divide the kale between the two bowls and cover.

  6. Heat the remaining 1 teaspoon of oil in the same skillet over low heat. Pour in the egg mixture. As curds begin to form, slowly stir with a rubber spatula (use a folding motion, scraping the egg from the bottom of the pan and folding it over the top). Do not overcook the eggs as they will continue to cook from residual heat when removed from the skillet.

  7. Divide the eggs between the two bowls. Serve topped with avocado and Pico de Gallo.
